What you can judge in a shisha shop and not online
Four things, and all four are physical.
Weight and balance
A hookah that is too light for its height topples the moment someone pulls on the hose. That happens with thin aluminium models on a narrow base. In the hand you feel it straight away: lift it by the stem and see whether it hangs to one side.
The weight is rarely on the product page, and where it is, it says little, because the distribution matters more than the total. A heavy model with all the mass at the top is less stable than a lighter model with a wide foot.
Glass thickness and the rim of the base
On the rim of the base you feel how thick the glass is. Thin glass is not automatically bad, but it breaks sooner during cleaning, and that is exactly where most bases go. A thick-walled base has a noticeably heavy bottom and a rim you can run your thumb over without it feeling sharp.
In a photo both look the same. Even a close-up does not show it, because photographers light glass from behind and then everything looks equally clear.
How a connection seals, you feel with your hands
This is where most of the disappointment sits. A hose connection that does not seal tightly lets air in, and then the hookah draws weakly while nothing is broken. With a hookah in the shop you push the hose on and feel whether it grips or slides straight back off.
The same goes for the bowl on the stem. A grommet that sits too loose you notice by turning the bowl a quarter turn: does it hold, or does it play? That is a two-second test you cannot do online.
What a product photo does show well
Shape, proportions and whether a model suits your taste come across fine in a photo. The size is reliable too, as long as a height is stated. It goes wrong with everything you judge by hand or by light, and that is a shorter list than people think.
That is why a visit to a shisha shop is not a replacement for looking online but an addition to it: you narrow it down at home, and in the shop you test the two or three models that are left.
Why the colour in a photo does not match
Iridescent glass, smoked glass and anything with a metallic coating are notorious. The colour changes with the light and the angle, and a product photo captures one moment under studio lighting. A base that is purple in the photo can be blue-green at home.
With a solid colour it is not so bad. With a gradient or a mirrored finish you want to have held it, certainly if it has to match an interior.
What a good shisha shop keeps in stock
A shop that only sells complete sets is a shop you visit once. The difference sits in the parts: separate bases, grommets in several sizes, screens, adapters and mouthpieces. Those are the things that break or go missing, and if you cannot buy them on the spot, you end up searching online anyway.
Look as well at whether several brands stand side by side. One brand on the shelf usually means a purchasing agreement, not a choice.

A selected part of the range, set out on the counter. Smaller, but the models that are asked for most. Handy if you are nearby and want to see one particular thing.

When a visit pays off and when ordering is faster
Pays off: your first hookah, a model above a hundred euros, something with an unusual base, or a choice between two models that look identical on paper. All cases where the difference sits in the hand.
Does not pay off: charcoal, flavors, foil, grommets and mouthpieces. Those can be judged completely from a photo and you know in advance what you get. Ordering is faster there, and ordered before 18:00 arrives the next day.
What to look for when you walk into a shisha shop
Three things say more about a shisha shop than the window display.
Are the models built up or only in boxes? A shop that builds them up shows that the parts fit together. Can you pick a model up without anyone getting nervous? That is exactly what you came for. And ask about the difference between two models standing side by side: the answer gives away whether someone smokes themselves or only sells.
What you are better off buying online
A shisha shop is strong at what you have to feel and weak at what you have to compare. Comparing on price and stock works better online, and you see at a glance which flavors have come in. The shop is there for the things you have to feel; the range is there for everything after that.
